Eat Around the World! Gail Mulani and Binita Adhikari

Another installment of “EAT AROUND THE WORLD” down in the BHS café. Today’s Indian feature is Tandoori Chicken (Marinated for days in Yogurt and Spices) served with Tomato Ginger Dal, Raita/Yogurt Sauce and White Rice. They’ll be some tasty samples and our very own Gail Mulani and Binita Adhikari will be serving it up!

Tandoori chicken is a dish popular on the Indian subcontinent consisting of roasted chicken prepared with yogurt and spices. The name comes from the type of cylindrical clay oven, a tandoor, in which the dish is traditionally prepared.  In Food Services, we will bake it in the oven.

Tomato Ginger Dal
Yellow lentils are boiled with fresh ground ginger and salt.  We then thin out the dal and saute oil, cumin seeds and tomatoes.  Cilantro is added to the dal and at the end as a garnish.

Raita/Yogurt Sauce
Yogurt, Cucumber, Carrot, Salt and Pepper, a touch of chili powder
